peanutbutter♥ loves pork chops and I can see why. It’s tasty, being attached to a bone and it’s totally universal. You can practically do anything with it. You can fry it, bake it, roast it, glaze it, put some sauce over it, put it over rice, over pasta and you can stuff it with anything.
I didn’t know stuffed pork chops are my thing until I made it. I stuffed it with black olives, garlic, mushroom, butter and cheese….
As much as possible, I like to keep the recipe simple, you know, like sticking with 5-7 ingredients…
In between stuffing and roasting, I also realized that these pork chops are kind of like how I want to live my life…
They’re big. They’re BOLD. They’re filled with all the good stuff you can imagine….love, happiness, contentment and courage.
I know. You might be thinking how weird I am, comparing my life to pork chops but it’s true. Life can be as simple as that.
I am letting myself be inspired with all the things that happen everyday….even little things like cooking, the morning drizzle, the instructor who’s sleeping while giving me driving lessons {what? yup, happened twice — made me twice as alert, hee}, those early morning FB chismis {gossip}….
and the fact that Life is really how you make it….

Pork Chops stuffed with Olives, Mushroom, Garlic & Cheese

Ingredients
- 3 thick cut pork chops {you can also use boneless if you want}
- ½ cup sliced mushrooms
- ½ cup sliced black olives
- 3 tsp butter
- 3 cloves garlic, minced
- salt and pepper
- quick melting cheddar cheese
- 1tbsp butter+ 1 tbsp olive oil for searing
Instructions
- Season pork chops inside and out with salt and pepper.
- Sauté garlic in 3 tsp butter just until butter is infused with the flavor of garlic.
- Stir in mushrooms and black olives and turn off heat.
- Put a tablespoon inside each pork chop piece plus a slice of quick melting cheese.
- If you don’t have time, you can just mix these four ingredients in a bowl and stuff it inside the pork chops.
- Heat 1tbsp butter+ 1 tbsp olive oil in a nonstick skillet.
- Sear each side of the pork chops for 3-4 minutes until brown.
- Transfer to a baking pan and roast in the oven at 400ºF for another10 minutes or until cooked through.
- Remove from the oven and let the meat rest for 3-5 minutes before serving.
- Serve it with a simple cheese sauce by stirring 1 cup of cheese into ¼ cup hot milk until cheese is dissolved, then pour over pork chops…

Oh, I like this kind of stuffed mushrooms! They look wonderful.
i will cook this recipe over this weekend to add up to my other menus for the Father’s Day celebration, surely my boys will really feast on it for they love mushrooms and porkchops as well, ideal for a lunch pack too.
