I told you, I’ll be posting what we had for breakfast, lunch and dinner at the Piña Colina Resort.
This is one of our Dinner dishes for Day 1.
We made this to pair with the Pulled-Pork Sandwich. The pulled -pork I made turned out to be a little salty, this salad helped balance out the taste.
Truth is, I don’t know what to call this salad. The main ingredient seems to be cucumber. So let’s just call it, Cucumber Salad…
Ingredients:
2 cucumbers, diced
1 apple, cored and diced
½ cup raisins
1½ cup mayonnaise
2 tomatoes sliced
1 hard-boiled egg, shelled and sliced
lettuce
salt and pepper to taste
Directions:
- Combine the first four ingredients in a bowl and mix well
- Season with salt and pepper to taste.
- Arrange lettuce in a plate, pour in the mixed salad
- Top with tomato and egg slices

Mmmm looks good, Peach! Pahingi rin ng pulled pork sandwich mo hehe.
At least there is a salad to make up for the saltiness in the pulled pork sandwich ;p
peach you and your family is really amazing with cooking noh? grabe effort din yung magprepare ng own food sa mga trips. pero at least, sure kang masarap ang magiging food nyo. =D minsan kasi overrated yung food na nabibili lang sa mga resto.
i love how you take pains to make your food visually appetizing. work of art. =D
