I try so hard not to make you jealous.

After all, I have a terribly cute husband, a pretty little princess with chubby cheeks and a big bowl of Beef with Pineapples all to myself. It is FRIDAY after all….

..and Fridays are meant to be cheat days…hee. But I didn’t cheat.

The truth is..I am soo jealous. Sis ate two full bowls of rice topped with this yummies! Man, I could tell how well she liked it because of the “extra rice”.

I couldn’t. The  weighing scale and me are so not friends today. Well, we haven’t been really friends for a long long time now..

You know what makes me glad, though? I think sis will treat us to a movie today. So before I go, {if I go} I’ll leave you with the recipe and you can probably have this for dinner later.

Pinya Bistek (Filipino Beef Steak with Pineapples)BISTEK is Filipino Beef Steak.

It is usually beef cooked in soy sauce and calamansi juice and garnished with caramelized onion ring slices. This is Bistek with a twist of pineapples.

Pinya Bistek/ Filipino Beef Steak with Pineapples

Ingredients

Scale
  • 500g beef sirloin, cut into strips
  • 2 cup pineapple juice
  • 2 cup pineapple tidbits
  • 9 tbsp soy sauce
  • 4 tbsp calamansi juice
  • pepper to taste
  • 3 white onions, sliced
  • 3 tbsp canola oil

Instructions

  1. In a large bowl, combine pineapple juice, soy sauce, calamansi juice and pepper. Mix well.
  2. Marinate beef in the mixture for at least 1 hour.
  3. In a non-stick pan, heat oil. Sauté onion slices until it’s a little bit caramelized. Set aside.
  4. In the same pan, fry beef strips until light brown. Add marinade and simmer for 10 minutes in very low heat.
  5. Add onions and pineapples and wait until it simmers. Turn off heat.
  6. Serve with steamed rice.
